Methode Traditionnelle NV

Summer fruit and fresh baked bread aromas are complimented by a rich yeasty palate and a long, dry mineral finish. A very food friendly sparkling style, we love it with Bluff oysters or Crayfish with garlic butter.

Picked by a special team as part of our ‘Pick your own bubbly’ event in March 2020, the weekend before lockdown, this is a special Methode Traditionnelle.

Vineyards

The fruit for this wine is grown on our home vineyard, Matahiwi. A raised gravel ridge outside of Masterton in Northern Wairarapa. The blend consists of Pinot Noir (60%) and Chardonnay (40%).

Winemaking

The base wines were fermented in small tanks and old barrels, where they had extended aging on lees. The blend was assembled and re fermented in bottle, before further aging on the yeast. The wine was then hand disgorged, corked and dressed for market.
